American Ale Wyeast - WY1056

Fermentation Temp Range (°F): 60-72
Apparent Attenuation Range (%): 73-77
Flocculation: Medium-Low
Alcohol Tolerance: 11%

Pitching/Fermentation: Produces diacetyl and fusels if reproduction stage is over 71°F or excessively underpitched. Poor attenuation if below 60°F. Serial pitching will result in an extremely (88%+) attenuative yeast after 6-7 generations. Mild citrus notes develop with cooler (60-66°F) fermentations.

Notes: This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile. Low fruitiness, mild ester production. Normally requires filtration for bright beers.

A very active yeast

This yeast activated quickly and ferments fast. Don’t over fill your fermenter or you will have a big mess to clean up. No problem with lagging out. Very easy to use.

The bag was partially swollen but still was good!

When I got the package it appears the nutrient pack was popped probably during shipping and the bag was a little swollen.
I just put it in a fridge and it was fine
It started my fermentation pretty quickly! Like 10 hours. So this was definitely some good stuff

Great DIPA yeast

I used 1056 recently to ferment a Pliny the Elder clone kit purchased through AIH. I prepared a starter and had signs of yeast activity within 12 hours after pitching into the wort. I fermented around 66F for 1 week, then let the bucket free rise to room temp for another week. I got 85% attenuation with no off flavors. 1056 is a very strong yeast that produces clean and crisp flavors that allow the hops to shine. I will definitely use again for American IPAs.
