Pitching/Fermentation : If fermentation is colder than 66 diacetyl rest is recommended

Notes : Clean, highly flocculent, and highly attenuative yeast. This yeast is similar to White Labs 002 in flavor profile, but is 10% more attenuative. This eliminates the residual sweetness, and makes the yeast well suited for high gravity ales. It is also reaches terminal gravity quickly. 80% attenuation will be reached even with 10% ABV beers.

Not good for summer brews

The White Labs yeast purchased as part of my Adventures in Homebrewing recipe kit was DOA, presumably due to summer heat during shipping. Imagine my surprise and disappointment when the replacement packet I purchased from my local home brewing store was also dead. I ended up throwing out my failed yeast starters and using a dry yeast: Lallemand Nottingham High Performance Ale Yeast. I have had great results with the Nottingham and will use it at least for all summer brews.
