Pitching/Fermentation: An Omega Yeast original, Saisonstein's Monster is the mated offspring of French Saison (OYL-026) and Belgian I (OYL-027). Versatile, aromatic and attenuative with a silky mouthfeel, it excels in high gravities, ferments reliably and thoroughly, and is spicy, complex, tart, dry and crisp, with some bubblegum. More fruit and fewer phenolics than the French.
