Excellent for Cool Fermentation

All of the Lalvin yeasts has a good tolerance for metabisulfite, but QA23 is my choice for cool fermentation of white wine. Actively ferments the must to dryness in about four weeks at temperature ranges of 53 to 57 degrees F.
