This recipe comes specifically for Big Brew from Tom Nickel of Oggi's, Left Coast Brewing Co., and O'Brien's Pub. Tom gave a presentation on Imperial IPA at the AOB Craft Brewers Conference April 15, 2004. Dry yeast is optional, but original recipe calls for Wyeast or White Labs.

A great IPA

This was my first ìbigî IPA in all grain and it is one of the top 5 beers Iíve ever brewed. I used Voss Kveik for yeast, pitched at 94F and let it settle to room temp. Fermentation began quickly but lasted more than 2 weeks! I was a little light on the OG, I didnít get enough boil off I think the final reading was 1.066, but I got a complete fermentation down to 1.010. The nose has only hint of fruity character, but itís good. The result is light and easy to drink for a DIPA, well balanced, and not over the top with the hops. The beer pairs well with practically anything and is well liked by all who have sampled it.
