Great lager yeast

This yeast produces a very crisp and clean lager with no off flavors. It attenuates more and has a crisper mouthfeel than 34/70. This is my new go-to lager yeast strain!

Diamond lager yeast

Brewed a lager using 8 lb weyeman barke pils 2 lb 6 row and .5lb carafoam . 2oz of acidulated malt in the strike water to adjust ph to 5.2. chilled to 60f vigorously aerated wort and sprinkled dry yeast directly on top making sure yeast didnt clump together. Stirred again vigorously with slotted mash paddle. Put into my keezer set to 50f. Within 18 hrs had slow airlock activity . After 30 hrs nice healthy fermentation. After 4 days it appeared to be done but I know from experience not to rush a lager. Waited 3 weeks ( my standard when brewing lagers I transferred to a co2 purged secondary my gravity was at 1.008 . I did a forced diactyl test and beer was clean and ready for lagering. The beer tasted fantastic with no off flavors and the yeast cake was very white and healthy looking so I harvested it for another batch. Very happy with this yeast but like every other craft brewer really want to try them all !

Clean Lager Yeast

I used this yeast in my first attempt at an Oktoberfest. Pitched 2 packets at 55F into 1.050 wort. Saw some mild action 7 hours later. Airlock was bubbling about 1x per minute 17 hours after pitch, then off she went! Lends a clean flavor and mild aroma that doesn't interfere with all that malty Oktoberfest goodness.

I'm a dry yeast advocate and this is the best dry lager yeast out there. Not a lot of reviews on this one. I brewed an Oktoberfest and it tastes awesome. It has a bit of that tang from German style beers. Fermented at 65 F. with one packet. No off flavors.
