I started using this yeast a couple of years ago with a single-varietal (Jonathan) cider I make. I'd originally intended to flavor the cider post-fermentation, but after tasting the results decided to keep it as-is and make another batch the following year. Crisp, clean finish, clears nicely, and zero issues with slow or stuck ferments. Well-worth the price.

In my 28 years of producing ciders, I have tested more yeasts than I care to count. This is my go-to choice for producing everything but French style "keeved" ciders. Has always been healthy, with great starts and aggressive primary fermentation. Leaves just the tiniest bit of yeasty funk, and precipitates out very well.
