Great Kit

I've made this all-grain kit twice. First time, it was spot-on for Tank 7. In fact, at a neighborhood party I served this beer (straight recipe, no alterations) from the keg alongside Tank 7 from the bottle - and a quick poll found that no one could consistently tell the difference. The second time I went a little bit off script, adding bourbon and caramelized figs to the secondary. Kegging this weekend, so we'll see what happens!

Wonderful Kit...but maybe not a Tank 7 clone

I bought this hoping to make a Tank 7 clone, but I think Iíve ended up with a 10%+ Saison instead. Mashed in at 150 and ended up 5.25 gallons in my fermenter with a gravity of 1.084. I pitched Belle Saison yeast and after two weeks at 72F my final gravity is 1.004, much lower than the recipe shows at 1.022. I just dry hopped and tasted the gravity sample I pulled. It tastes like a wonderful Saison, but itís definitely not a Tank 7 clone at 10%.
