Forgiving temperature tolerance

Weather started out hot, and then got chilled. The first pitch worked a little slower then expected. The end product had a slight yeasty flavor [my fault] due to the dipping out of the wash. I reused the remainder of my first wash for a second pitch with the clearing agent and the results was excellent.
