Sodium Metabisulphite is a sanitizer. Use one 2 ounce per 1 gallon of water. Antioxidant and bactericide- use 2/3 teaspoon to 5 gallons. Dissolve sulphite in warm water before adding.

When I make IPA or lager batches larger than 5 gallons, I bottle the remaining and use NaMBS to help with aroma retention and avoid oxidation. If it is an especially hoppy beer I add ascorbic acid as well, with no ill results or responses.
