Better than expected

I knew I'd be away from home on an extended trip during most of 2022, so I was able to let this beer cask condition for a full 10 months. I've been home brewing for over 15 years now, but never made a barley wine before. It came out great!

For reference, I pitched a 1L starter with White Labs WLP001 California Ale yeast. I also pitched a sachet of Safale US-05 yeast which I rehydrated with Go-Ferm. Just wanted to cover all my bases and make sure there was enough viable yeast to handle the high gravity. Other than that, I followed the recipe as given, using only the ingredients provided.

I left it in primary for 1 month before transferring it to a keg for an additional 10 months of conditioning. It clocked in at a whopping 10.76 ABV - the highest of any beer I've ever brewed! Coppery amber in color, there's still enough residual malt sweetness and subtle hops to balance the alcohol, which is barely detectable.

This turned out to be a great sipping brew. I expect to be enjoying a glass of this most nights during the cold northeastern winter months.

If you have the time, patience, and a favorable conditioning environment, I'd recommend giving this kit a try!
