Steam Beer! An ode to the Yooper, bitter but lovable at the same time. The Frozen Flame, is everything you expect in a Steam Beer. Well balanced with a clean lager-like finish. Lager-like character comes from Saflager S-23. This yeast will ferment cooler (58-65 °F) or at traditional ale temps (68-72 °F), and still finish clean. As folklore would have it. The winter after Paul Bunyan dug Lake Michigan, (a drinking hole for his Blue ox, Babe), he decided to camp out in the Upper Peninsula. The lumberjacks in camp didn't want the bunkhouse lit at night. In order to get some sleep, they moved the lanterns way outside of camp. After a while, they forgot about the lanterns. The Michigan Winter got so cold, that the flames of the lanterns froze solid. When the thaw came in early spring, the lanterns flared up again and set all of northern Michigan on fire! They had to wake Paul Bunyan up so he could stamp out the fire with his boots. To you, with hopes that the Frozen Flame Steam Beer can quench even the biggest of thirsts!

Great kit

I use this kit to make 8 different beers. Could probably make more but that's what I like. Here's one, when steeping the grains add 1/2 lbs of flaked wheat for a creamy foam head. Start the boil with both packets of the northern hops. Add 2 lbs of honey with the malt extract. 30 minutes into the boil add 1oz of cascade and 1 oz of Willamette hops. At 45 minutes repeat the cascade/Willamette. At 5 minutes repeat the cascade/Willamette again. Dry hop 1st stage with the same and add 1 package sweet orange peels. Do the same with 2nd stage. At 1st stage dry pitch 2 Safale 23 packets. It should finish at 7.3% abv. We call it Mr. Scary cause it's that good.

I have brewed this twice now and will need to do it again soon. Of all the beers I have shared with friends and family, this has generated the most compliments (and requests for more). I only wish that some of my all-grain brews were as popular.
