Coopers canned beer kits are unique because they are the only kits produced by a working brewery: Coopers in Australia. Much of Mexico and Australia are known for their arid lands, dusty conditions and oppressive heat. So it’s not surprising that the people of Mexico and Australia are expert at quenching a thirst. Coopers Mexican Cerveza emulates the style of the finest quality beers exported from Mexico. This premium beer is light in style with a fresh clean taste, ideally served ice-cold with a wedge of lime or lemon.

Coopers 3.75 pound cans are designed to make 6 gallons with an original gravity of 1.040 (with 2.25 LB of dry malt extract or sugar) giving about 4.1% ABV. We prefer to make 5 gallons with 3 LB of dry malt extract to give an OG of about 1.051 and 5.2% ABV.

Extract economist
Good, but the other coopers are better

This is the 5th or so extract can from Coopers that I have "brewed". On this one, I did no boil, water straight from the well, kviek yeast around 75-80 degrees for 3 or so days, with the last 2+ as pressure carbonated in the keg with a spundling valve. Sort of drinkable in 7 days but better at two weeks. I added a little dextrose too. I decided to experiment with this summer beer and actually used 7.5 gallons of water. The end result was really good for a summer beer. Close to carbonated water with minimal or no hop taste. Great to guzzle with added lemon juice. The wife even "really liked it". Now that it is fall, I will go back to the darker Coopers, but for summer, this one is as good as it can be. And I don't even like mexican beer..
