Chimay Red Clone All Grain Recipe

Belgian Dubbel at it's best. Big notes of dried and candied fruits, spicy and floral hops, and slight warming character. Altogether makes for a wonderful Trappist style ale. Premier Classique Red Star Wine Yeast (included with recipe kit) can be added to your secondary for a second fermentation, this dries it out and helps with proper carbonation.

Great Beer

Brewed this several weeks ago. Left in fermenter two weeks, bottled, and let bottle condition. Tried my first two last night. Clear as a bell, perfect head, nose was great, and the taste was wonderful. Been brewing since 1981 and was ecstatic how well this beer turned out. Followed the recipe exactly. I usually have to "work" on kits to get the flavor I am after, not on this one and I just ordered another because it is so good..

Missed the Mark

Two weeks in the fermentation process. I did not hit the OG or the FG. The grain was not as cracked up as I would like it to be. The efficiency is not there. I am hoping that the flavor and taste are on mark.

This batch is still in the primary so my review is limited. The only thing I can complain about is the grain I received wasnít all cracked. Because of this our mash efficiently wasnít as good as it should have been. I picked the Abby Ale yeast from Wyeast and it took 36 hours when I made the yeast starter for it to take off. After looking at reviews this is apparently very common with that yeast.

Awesome beer

Used WLP540 and it fermented down to 1.006 in six days. A clean nose, light fruity esters. The wife immediately pronounced it a winner.
