This was my first brew ever and it went great. The kits from AIH are well packaged and instructions quite clear. I cut and scraped the vanilla beans, then soaked everything in a tiny amount of bourbon for 3 days to make a tincture (and sanitize the beans), then added when transferring to the secondary. I went 14 days in the secondary just to infuse as much vanilla as possible. Despite all of that, the vanilla flavor is too faint for my personal preference. Besides that, overall, the porter tastes awesome, especially for my first brew ever. I'd brew again, but would need double the vanilla.
Cracked the first bottle tonight. Used the Omega British Ale Yeast, very active high foam in primary fermentation, leave head room in fermenter. Nice aroma, smooth, just a little bitterness, not too heavy. Would definitely brew again.
Vanilla beans were broken in pieces. Couldn't split and scrape like I had read to do before adding to fermentation. Too skinny! Not sure if they are always like this? First time using them. Other than that 5*****.
Currently this brew is in the secondary fermenter with the vanilla beans. This would be a 10/10 kit if there was more direction. What I mean is that there was really no info in the kitchen on what to do with the beans. After searching online I found that the beans needed to be cut down the middle and scraped after having soaked them in a bit of vodka and then dumped into the 2nd fermenter. Otherwise I'm happy with the results this far.
This kit is awesome, especially for beginners like me. Grain bill came already in the grain bag, it was all just literally open packages, add to the brew per instructions. I doubled the vanilla beans (4 total, they sell additional on here cheaper than anywhere else) and itís in week 2 of secondary. Tastes good when Iíve tested it. Get the yeast nutrient, wish I had.
